Carnivore Pizza

Carnivore Pizza.

Ingredients:

  • 1lb Chicken Breast
  • 50g Grated Parmesan
  • ½ tsp salt
  • 2 eggs

First up you will need to shred your chicken breast. You can buy tinned chicken or you can use your raw chicken breast, as I did.

How to Cook Shredded Chicken

  • Put boneless, skinless chicken breasts in a pan or pot.
  • Add chicken broth or water to cover the meat.
  • Season with salt and pepper.
  • Bring to a low simmer over medium heat, then turn the heat to low. Do not let it boil hard, or the chicken will get tough.
  • Cook for 10 to 12 minutes until the internal temperature reaches 75°C
  • Let the chicken rest for 5 to 10 minutes so it stays juicy
  • Two Forks: Hold the warm chicken on a board with one fork and pull the meat apart with the other.

Now we can move on with the recipe:

Method

  1. Preheat the oven to 200c or 180c fan. Line a baking tin with parchment paper.
  2. Stir together in a bowl the shredded chicken, grated Parmesan cheese, eggs and sea salt.
  3. Spread the chicken crust pizza “dough” into a baking pan, as thinly as possible (about 1/4 in thick).

  1. Place in the oven.
  2. Bake for 15 to 20 minutes, until firm and golden on the edges.

  1. Let the crust rest for 10 minutes, which helps “seal” it.

Return to the oven for 10 to 15 minutes, until the cheese is melted. If desired, place under a grill for a couple of minutes to brown the cheese more.

Chicken Carnivore Bread Bun

Ingredients:

  • 300 g Raw Chicken Breast
  • 2 Large Eggs
  • 2 tsp Baking Powder

Boil the chicken for 15 minutes. Put the other 2 ingredients in to a food processor. Allow the chicken breasts, once cooked to cool down so you can handle it. Roughly chop the chicken before adding it to the processor.

Once you have processed the mixture, it will look like porridge, Jen says it looks like something else, but I won’t say what.

I’m making two buns, so you measure out approximately 150g in each tin. I’ve used a 4 inch cake tin but you could use a ramekin.

You then set an air fryer to 160°C and bake for 15 minutes.

After cooling in the tin for 10 minutes, here’s the finished product……..

Bacon & Goats Cheese Fritatta

Ingredients

  • 250g of Smoked Bacon
  • 8 Eggs (free range if possible)
  • 120ml Double Cream (not cream substitute: eg Elmlea)
  • ½ tsp course sea salt (not table salt, it contains anti caking agent)
  • 120g Goats Cheese (diced) or cheese of your choice

Method

  • Preheat the oven to 200c or 180c fan.
  • Grill or air fry your bacon. Then cut into small pieces.
  • Whisk together the eggs, double cream and salt.
  • Stir the goat’s cheese and cooked bacon into the egg mixture.
  • Line an 8 inch square baking tin with baking paper. It’s easier to take out of the tin when baked.
  • Bake in the oven for 30 minutes or until there is a slight wobble of the frittata.
  • Allow to cool before cutting, it’s easier.

Carnivore Pizza

Ingredients

  • 500g chicken mince
  • 120g powdered pork rinds
  • 1 egg
  • 50g cream cheese

  • Plus your choice of topping.

Method

  • Heat oven to 180fan /200c
  • Mix the pizza base together until smooth,
  • Shape the mixture in to a pizza base and bake at 180/200c
  • When the base is baked, top with your choice of toppings. I used Mozzarella, Beef mince, Pepperoni and Bacon.
  • Put under the grill until browned off. I grilled mine for 10 minutes though I guess you could leave longer.

I can tell you this pizza is very filling AND I prefer it to a conventional pizza.

Carnivore Scotch Eggs

Ingredients

  • 4 large eggs
  • powdered pork rinds 25 g
  • 45g grated Parmesan cheese
  • 500g Pork Mince
  • 30ml melted butter.

Method

  • Fill a saucepan with enough water to cover the eggs by at least an inch. Place the saucepan on the stove and bring the water to a boil over high heat.
  • Carefully add the eggs to the boiling water using a slotted spoon. Reduce the heat to a gentle simmer for 5 minutes (soft), or up to 9 minutes (hard). If you want your yolks runny, make sure to place the eggs in ice cold water to stop the cooking process.
  • Once cooled, gently tap and roll the eggs on a hard surface to crack, then peel off the shell and discard it. Be careful not to break the egg, especially if you are cooking them soft.
  • Place pork rinds in a food processor and process into fine powder. Grate the parmesan cheese. In a bowl, combine the pork rinds with the parmesan. If using whole sausages, remove the casing.
  • To make the Scotch Eggs, divide the meat mixture into 4 parts. Flatten using your hands like a thin meat patty
  • Place a peeled egg in the middle of each meat patty and gently wrap the meat around the egg

  • Place the Scotch eggs in an air fryer and brush with either some melted butter, cook at 200 °C for 10 to 12 minutes. When done, remove from the air fryer and set aside to cool down slightly before serving.
  • Serve while still warm.
