Keto/Carnivore Cheese Sauce

This flourless cheese sauce is great for diabetics and is the best and creamiest cheese sauce I’ve found.

The left just shows how thick the cheese sauce is.

Cheese Sauce covered hard boiled egg and Pork Belly.

Ingredients

  • 120 g cream cheese
  • 60g butter
  • 80g double cream
  • 125g grated cheese
  • Pinch Mustard Powder (optional)
  • Salt to taste.

Method

  • Add Cream Cheese, butter and cream into a saucepan.
  • Once the ingredients have started to melt, whisk until smooth
  • Add the cheese, and salt if using.
  • Whisk until the cheese is melted.
  • Transfer to a bowl and serve.

Making this sauce only takes 5 minutes once you have put the ingredients together. It is so simple.

Whipped Tallow Moisturiser

I came across a tallow moisturiser a year or so ago (I bought a small tub, actually a very small tin). I’ve been mulling over making it for that long.

Both myself and Jen love it, the moisturiser isn’t at all greasy and lasts on your skin all day.

You will need:

  • Microwave
  • Hand Whisk
  • Microwavable Large Bowl
  • Glass jar

Ingredients

  • 250g Tallow
  • 2 tbsp Extra Virgin Olive Oil
  • 10 drops essential oil, I used lavender

Method

  • Gently soften the tallow in a glass bowl, I used a microwave to soften in 10 second bursts until the tallow was soft enough to whisk – so long as it’s soft enough to put your finger through it, that’s fine. Don’t heat so much as it goes to a liquid.
  • Add the 2 tbsp of your extra virgin olive oil and your essential oil to the softened tallow.
  • Whisk the mixture up until you have soft peaks.
  • Find a suitable pot to spoon the mixture into. You could use a kilner jar, I only had a jam jar.
  • Your moisturiser is now ready to use.

I buy my tallow which is generally made from beef fat in my local Tesco, it’s closest to me. I’ve seen it in other large UK supermarkets though I’ve yet to see it in my local Lidl or Aldi.

Both me and Jen use our moisturiser on our face and hands. Apparently tallow is an anti aging cream too, I will wait and see. I also found it works well on my feet. 

I use the cream If I eat foods that don’t agree with me ( I don’t eat veggies) I often come out in a rash across my face, tomatoes certainly effect my face with hours, I recently found cheese has the same effect on me and it makes me itch,I love cheese, I could eat a whole block in the past, now I just have a minimal amount if we have it. Failing cheese I will have a slice of salted butter which I absolutely love. It’s been known for Jen to eat a block of butter in the past but a slice or two is enough for me.

Week 2 Last week wasn’t a bad one. Seven pounds lost. With that in mind, I am to keep myself on track by keeping myself accountable whilst being on holiday.

This week was a holiday we planned to stay on track. We arrived at our destination with good intentions. We were greeted with a piece of Bara Brith and a Welsh cake each. Of course because of the addiction in us we ate it. Never mind we wouldn’t get hooked on sugar!!

Below is a selection of Carnivore meals that we ate throughout the week, 4 of the days I had my usual staple of burger and eggs.

We came home after a lovely holiday. We treated ourselves to a large americano coffee with pouring cream everyday. On arriving how we were both determined not weigh in until April 1st.

Week 3 – Really very pleased with each other for staying on ‘plan’ this week. Back to it and we have a meal plan in place. You would think I would get bored because for 5 of the days this week I had Burgers and Eggs but on Sunday we had roast leg of lamb and on Saturday I ate my usual steak with some ox liver.

Week 4 – We changed it up this week with some different foods which I will put photos of later. Monday we went to the church for a coffee before our weekly visit to Lidl and Tesco. On a Tuesday we normally help out at the church in the warm space and have our meal later in the afternoon. Wednesday the grand children and our daughter called over and we provided a Carnivore sharing platter.

As you can see, we had a varied diet this week. Thursday we paid a visit to the cinema, Friday our weekly coffee and cream at Costa in Chepstow.

Today I was really proud of declining 3 Easter eggs today (Easter Sunday). I love chocolate but it’s the sugar for me, if I had eaten one, I would spend the next 3 months or so buying chocolate in Tesco until I sorted my head out.

Instead, we enjoyed this shoulder of lamb

A Few Holiday Snaps

Carnivore Egg Bites

Ingredients for 12.

  • 6 – eggs
  • 50g – grated cheddar
  • 56g – cottage cheese
  • ¼ tsp – salt
  • ¼ tsp – pepper
  • 60g – bacon/salmon bits

Method

  1. Preheat the oven 150c / 130c FAN.
  2. Blend first 5 ingredients to pepper in a blender.
  3. Put salmon/bacon in the base of muffin tin holes
  4. Add mixture to oil sprayed muffin tins (no lining).
  5. Bake for 25 – 30 minutes.

I used a silicone muffin tray, it’s much easier for the egg bites to be released.

Carnivore Pancakes

This pancake recipe is so simple with just 2 main ingredients. They do take about 5 minutes each but give them 20 seconds in the microwave to heat them up again.

Ingredients

  • 3 Egg Whites
  • 3 Egg Yolks
  • Butter or Lard

Method

  • Whisk together the egg whites until soft peaks.
  • Whisk the yolks together until pale & frothy.
  • Fold the yolks into the egg whites
  • Heat the butter/lard in a frying pan, spoon the egg mixture into the frying pan.
  • Cook each side of your mixture for 2 mins 30 secs each side.

Top Tip

If you have one, place a lid over the top to enable faster cooking.  You may think the pancakes look too fluffy but once on the plate, the pancakes will deflate.
